Frozen Burgundy Truffle (Tuber uncinatum), also known as Autumn Truffle, is a wild European black truffle with an earthy woodland aroma and mild nutty notes. This C Grade selection consists of small whole truffles intended primarily for cooking, sauces, fillings, butter preparations and professional food production.

What C Grade Means

C Grade is a culinary and processing selection in which small size and irregular external appearance are acceptable. The truffles are generally approximately 1–10 g each and may vary naturally in shape, colour and surface condition.

The grade is suited to preparations where the truffles will be chopped, grated, blended or cooked and where large, regularly shaped presentation truffles are unnecessary. Before processing, the truffles are inspected and pieces showing unacceptable deterioration, excessive softness or visible pest damage are excluded.

Aroma, Flavour and Texture

Tuber uncinatum has an earthy woodland aroma with mild nutty and mushroom-like notes. The interior typically ranges from dark grey-brown to brown-black, crossed by pale branching veins.

After defrosting, the texture will naturally be softer than that of freshly harvested truffle. Frozen whole truffles are therefore particularly suitable for cooked preparations, sauces, fillings and applications where they will be grated, chopped or blended.

How to Use Frozen Burgundy Truffle

Defrost only the quantity needed for immediate preparation, following the handling instructions on the product label. Once defrosted, the truffles can be chopped, grated, blended or sliced according to the intended recipe.

The stated shelf life is 24 months from the date of manufacture when the unopened product is stored continuously at or below −18°C. Always follow the storage instructions and date printed on the package.

Origin varies by approved seasonal batch and is stated on the label or traceability documents. The vacuum-packed product is shipped frozen where suitable transport is available. Transfer the unopened package to a freezer at or below −18°C immediately after delivery.
