Fresh truffles are seasonal underground fungi valued for their natural aroma, flavour and culinary character. Unlike preserved or dried products, they are sold in their natural fresh condition and should be refrigerated and used promptly after delivery.

The products displayed in this collection are the fresh truffles currently available to order. The selection changes according to the natural harvest season, product condition and batch availability.

Depending on the season, the Terra Ross selection may include White Truffle (Tuber magnatum), Black Truffle (Tuber melanosporum), Summer Truffle (Tuber aestivum), Burgundy Truffle (Tuber uncinatum), Bianchetto Truffle (Tuber borchii) and Black Winter Truffle (Tuber brumale).

White truffles such as Tuber magnatum are generally shaved raw over finished warm dishes because their aroma is highly volatile. Black truffles vary by species and may be shaved, grated or gently incorporated into suitable warm preparations. Aroma, flavour and recommended use also depend on species, maturity and individual condition.

EXTRA Grade is selected for premium appearance and table-side presentation. A Grade offers well-formed truffles suitable for slicing and refined dishes. B and C grades may include smaller or more irregular specimens and are practical for grating, sauces, truffle butter and professional kitchen preparation.

Fresh truffles pair well with eggs, pasta, risotto, potatoes, butter, cream, Parmesan, mild cheeses, poultry and selected meat dishes. Shave, slice or grate them shortly before serving and avoid prolonged exposure to high heat or strongly flavoured sauces.

Refrigerate fresh truffles immediately at approximately +2°C to +4°C. Wrap each truffle individually in dry absorbent paper, place it in a clean airtight glass container and replace the paper every day to control excess moisture.
