Fresh Black Summer Truffle – Tuber aestivum B Grade

Fresh Black Summer Truffle – Tuber aestivum B Grade is a practical selection of smaller and naturally irregular truffles intended for sauces, grating, slicing, fillings and professional kitchen preparation.

B Grade focuses on culinary usability rather than uniform presentation. The selection may include truffles with irregular shapes, superficial scratches, minor cuts or other natural cosmetic imperfections. Each batch is inspected before packing and must remain firm and suitable for consumption.

What B Grade Means

  • Species: 100% wild-harvested Tuber aestivum Vittad.
  • Typical weight: Approximately 5–15 g per truffle.
  • Typical diameter: Approximately 1–3 cm.
  • Shape: Small, naturally irregular or less uniform than higher commercial grades.
  • Appearance: Up to 40% by weight may show minor superficial cuts or scratches.
  • Condition: Firm and free from rot, excessive softness, serious deterioration and visible insect infestation.

Aroma, Flavour and Texture

Fresh Tuber aestivum has a delicate earthy and woodland aroma with mild nutty and mushroom-like notes. Its flavour is balanced and savoury, making it suitable for dishes in which the truffle should complement rather than overpower the other ingredients.

The exterior is dark brown to black with a naturally textured surface. The interior ranges from pale beige to light hazelnut brown and contains fine natural marbling. Aroma intensity, interior colour and texture may vary according to maturity, freshness, growing conditions and the individual seasonal batch.

Recommended Culinary Uses

B Grade Summer Truffles are particularly suitable for sauces, pasta, risotto, eggs, potatoes, fillings, vegetable dishes and meat preparations. Shave, slice or grate them shortly before serving, or add them near the end of preparation to avoid prolonged exposure to high heat.

For a fuller truffle character, combine them with aroma-carrying ingredients such as butter, cream, eggs, mild cheese or potatoes.

Fresh Tuber aestivum B Grade truffles grated over creamy tagliatelle

Culinary Uses for B Grade Summer Truffles

Fresh Tuber aestivum B Grade is selected for culinary applications where flavour and usability are more important than uniform presentation.

Grate or slice the truffles into pasta, risotto, eggs, potatoes, fillings, creamy sauces or savoury preparations. Their smaller size and naturally irregular shape make them particularly practical for professional kitchens and recipes in which the truffle is incorporated into the finished dish.

Add the truffle shortly before serving or near the end of preparation. Avoid prolonged cooking or intense direct heat, which may reduce its delicate natural aroma.
