How to read the 2025 price evidence

A useful price record must retain its date, unit, product description and market stage. Removing those details can turn a defensible observation into a misleading promise. The classifications below explain what each source can support.

All accepted observations were published in euros. No currency conversion was needed, so no ECB rate was applied. Converting euros per hectogram to euros per kilogram is only arithmetic normalization. It does not make unlike channels comparable.

Documented truffle price observations in 2025

The table uses comparable series only within their own source and classification. Centro Nazionale Studi Tartufo refers to an average-sized Alba white truffle of about 20 grams. DRAAF PACA/RNM reports monthly Carpentras producer-market quotations. Tartufo.com rows are platform averages by size and stated Italian origin.

The white-truffle series are numerically different because they are not the same measurement. One is an institutional Alba average for a stated medium size on four autumn dates; the other is a platform's Italy size-band snapshot at the end of December. Neither should overwrite the other.

White truffle prices in 2025: Tuber magnatum

The Centro Nazionale Studi Tartufo 2025 price series provides the clearest series. Its page states that prices refer to the hectogram and an average size of about 20 grams. The average moved from EUR 400/hg on 11 October to EUR 450/hg on 18 October, EUR 480/hg on 25 October and EUR 500/hg on 1 November. Normalization gives EUR 4,000-5,000/kg within that one source, size convention and four-week period.

The Tartufo.com historical white-truffle price record gives 29 December Italian averages of EUR 1,150/kg for 8-20 g pieces, EUR 1,730.30/kg above 20-50 g and EUR 2,401.70/kg above 50 g. This separate marketplace snapshot should not be blended with the Alba series.

Black truffle prices in 2025: Tuber melanosporum

DRAAF PACA and FranceAgriMer RNM provide the strongest black-truffle evidence. The January 2025 Carpentras market report recorded an estimated 168 kg present and EUR 420/kg. The February 2025 Carpentras market report recorded 67.5 kg and EUR 462.50/kg. Both are monthly producer-market quotations rather than retail offers.

The February report describes a hesitant market despite good quality, with declining supply and careful negotiation. That narrative adds context but does not prove a single cause. The two values are comparable because species, market, stage and unit match; they still do not establish a national retail range.

Summer truffle prices in 2025: Tuber aestivum

The Tartufo.com historical summer-truffle price record lists Italian marketplace averages of EUR 234.68/kg for 8-20 g pieces and EUR 265.97/kg above 20-50 g on 12 September 2025. No qualifying value above 50 g was verified.

The two figures support a source-specific size comparison on one date. They do not prove retail availability, a completed transaction or a season-wide range. Tax, delivery and duties were not stated. The summer truffle guide remains the destination for identity, season and culinary use.

Burgundy truffle prices in 2025: Tuber uncinatum

The Tartufo.com historical Burgundy-truffle price record lists EUR 405.50/kg for 8-20 g pieces, EUR 490.80/kg above 20-50 g and EUR 630/kg for both larger bands on 29 December. These are platform averages, not proof that every size sold at those values.

A peer-reviewed Tuber aestivum and Tuber uncinatum synonymy study and a separate peer-reviewed morphotype and species comparison support the taxonomic caveat. That caveat does not authorize mixing separate commercial rows. The DOI identifiers resolved during QA; automated publisher access returned 403 and is not recorded as publisher-access PASS. Bianchetto truffle prices in 2025: Tuber borchii

On 11 April, the Tartufo.com historical bianchetto price record lists EUR 285.87/kg for 8-20 g pieces and EUR 350.64/kg above 20-50 g. A larger-size observation was not verified.

No qualifying dated specialist-retailer offer, official producer-market quotation or completed transaction was found. The platform figures must not be promoted as a European range. The spring white truffle collection is an internal destination only.

Winter truffle prices in 2025: Tuber brumale

The Tartufo.com historical winter-truffle price record retains one dated marketplace average: EUR 453.78/kg for the above-20 g to 50 g band on 14 February. No second comparable source was verified, so this article creates no indicative range.

The record does not state VAT, shipping, duties or transaction completion. It is evidence that one platform displayed a dated average, not that the value applied to every origin or grade. The winter truffle collection provides product context only.

What the documented prices include

None of the accepted records supplies a complete delivered-cost calculation. The safest reading is to keep the published amount intact and mark absent cost information as unstated.

Why unlike evidence stays separate

Season, size and grade in the record

The source set demonstrates size effects without proving a universal premium. The December white snapshot rises across three bands, while Burgundy assigns the same EUR 630/kg to two larger bands. A size label is evidence to preserve, not a formula to transfer.

Grade evidence is weaker. Carpentras identifies the species and market but no category split in the extracted table. Alba defines an average size but no detailed grade. A responsible history says “grade not stated” instead of assuming extra or first class.

Evidence limitations and missing channels

No dated wholesale report was accepted for white, summer, Burgundy, bianchetto or winter truffle. No qualifying archived specialist-retailer offer was used. Marketplace averages do not reveal every underlying listing, tax treatment or completed sale. Carpentras covers one French producer market and one species during two months.

The Tartufo.com historical widget remains live, but its headline page is updated for 2026. This article records exact historical dates rather than backdating its current headline. No undated retailer page, search snippet, legacy Terra Ross range or Price Index production record was substituted.

Scientific sources support identity, authentication and context, not annual prices. A peer-reviewed truffle species-authentication study addresses authenticity methods, while a peer-reviewed truffle market-evolution study supplies market context. Paolocci and Weden address naming. None is cited as a 2025 quotation. The DOI identifiers resolved during QA; automated access to the publisher pages returned 403 and is retained as an access limitation.

The research process also separated an observed offer from a completed transaction. A marketplace chart can summarize asking-price inputs without proving that any underlying listing sold.
